Shabu-Shabu is a hot pot dish made by swishing thin pieces of meat and vegetables in boiling stock broth and then dipping them in tasty sauce before eating.

Ingredients (2 servings)

50g/1.8oz Malony
700ml water
6cm Kombu (dried kelp)
1/2 leek
1/8 Chinese cabbage
1/4 shungiku (Chrysanthemum greens)
1/2 soft tofu
2 shiitake mushrooms
1/2 enoki mushroom
1/3 carrott
200g/7oz thinly sliced beef
< Sauce/garnishing >
Enjoy with your favorite toppings and sauce.
Ponzu sauce ※2
Sesame sause
Scallion(thinly sliced)
Grated radish
Sudachi citrus

Directions

1. Soak the Malony in hot water for 5 minutes or boil it for 2-3minutes.
2. Put water in a pot and soak the Kombu for 30minutes to 1 hour.
3. Slice the leek diagonally, and cut the Chinese cabbage, shungiku, and tofu into easy to eat pieces. Remove the stems from the shiitake mushrooms. Cut off the enoki mushroom's roots and then break it into small bunches, cut the carrots into thin slices and shape them using a cookie cutter.
4. Put the broth on low heat and take out the Kombu just before boiling.
5. Put the Malony, ingredients from step3 and Beef into the pot and cook them to your liking. Enjoy it with ponzu sauce, sesame sauce, or your favorite garnishing.

※1 Exclude the time taken to soak the Kombu.
※2 Ponzu sauce: Seasoning made of soy sauce with citrus juice.
