A soup distinguished by the sweetness of this season's fresh onion.
Malony can be used in various types of soup.
Ingredients (2 servings)
| 30g/1.1oz Malony |
| 1 fresh onion |
| 1/4 carrot |
| 200g/7.1oz chicken thigh |
| 1 tablespoon olive oil |
| 600ml water |
| 2 cubes of chicken stock |
| 1 teaspoon salt |
| Pepper to taste |
| Parsley (as you like) |
Directions
| 1. | Boil the Malony for 3 minutes, put it in a colander, cool it down under running water and then drain off the water. |
| 2. | Chop the fresh onion and carrot. |
| 3. | Cut the chicken thigh into bite sized pieces. |
| 4. | Fry the fresh onion with half of the olive oil until it's a golden brown, then put in a bowl. |
| 5. | Fry the chicken in a pot with the remaining olive oil until it browns. Add the carrot and continue to fry them together. |
| 6. | Add the fried onions, water and the chicken stock cubes into pot, simmer it for 2 minutes. Then add salt and pepper. |
| 7. | Pour the soup in a bowl and add with parsley to your liking. |
