This is a standard Chinese dish using Malony. 
The texture is similar to the original using mung bean starch vermicelli. But it is a little less acidic. 
This dish is also popular as a school lunch menu item in Japan.
Ingredients (2 servings)
| 30g/1.1oz Malony | 
| 1/3 cucumber | 
| 1/2 tomato | 
| 2 slices of ham | 
| 10g/0.3oz Kinshi-tamago (thin strips of egg) | 
| < Vinaigrette > | 
| 1 tablespoon & 1 teaspoon vinegar | 
| 1 tablespoon & 1 teaspoon sugar | 
| 1 tablespoon soy sauce | 
| 1 teaspoon sesame oil | 
Directions
| 1. | Boil the Malony for 5 minutes, put it in a colander, cool it down under running water and then drain off the water. | 
| 2. | Cut the cucumber into thin strips of 5cm/2in length, cut the tomato into cubes, cut the ham into thin strips. | 
| 3. | Mix all ingredients for the vinaigrette in a bowl, add the ingredients from step 1 and 2, and Kinshi-tamago, and mix them well. | 
| 4. | Serve in a bowl. |
