100g/3.5oz Malony |
300g/11oz beef (thinly sliced) |
1 Welsh onion |
4 Shiitake mushrooms |
30g/1.1oz brown beech mushrooms |
30g/1.1oz carrot |
20g/0.7oz Shungiku (garland chrysanthemum) |
1 Kinugoshi (soft) tofu |
5cm/2in Kombu (dried kelp) |

Directions
1. | Immerse Malony in water until it is soft. |
2. | Cut the Welsh onion, Shungiku, Shiitake mushrooms, and tofu into bite-size pieces. Separate the brown beech mushrooms into small bunches. Cut the carrot into thin slices. |
3. | Put water and the Kombu into a pot and turn on the heat. When the water boils, take out the Kombu. |
4. | Put Malony, vegetables and tofu into the pot and cook them to your preferred texture. Submerge and stir each beef slice in the soup until it is barely cooked. Enjoy with your favorite sauce and garnishes. |
